Engineering R&D applied to meat safety.

At Silsoe I led the abattoir engineering team focusing on two main topics:

  • Mechanical handling of poultry for improved welfare;
  • Meat hygiene, poultry and red meat, and for pathogens and CNS material.

I left the Institute at the end of May 2005 as part of its closure programme. David Tinker & Associates Ltd now offers an R&D service for abattoir engineering projects. There are already agreements, as a sub-contractor, to work with staff at Bristol University and Nottingham University. Projects that we are doing continue the collaboration between Silsoe (engineering applied to biological products) and the teams at these Universities (Veterinary Public Health and microbiology). The new projects are to investigate:

  • Self-cleaning carcass splitting saws;
  • Bio-security issues during the thinning of poultry sheds;
  • Methods of controlling pathogens on pig carcasses.
These studies are funded by the Food Standards Agency as part of its Science and Research programme.
